Chef’s Philosophy & Culinary Vision

At Layla, I’m cooking the food I love to eat: generous, flavour-forward and made for sharing. It’s a borderless approach shaped by the ancient spice routes — how ingredients, ideas and people travelled — and grounded here in Australia with exceptional Queensland produce. The goal is simple: food that sparks conversation and brings people together.

The idea — borderless, not rootless

My cooking has a confident Middle Eastern accent, but Layla looks outward. We follow the threads of spice from the Subcontinent to Persia and beyond, then retell those stories with an Australian spirit — bright, fresh, modern. Tradition gives us the rhythm; local produce sets the tempo.

We honour where flavours come from, then cook them for where we are.

Produce first — Queensland on the table

Great dishes begin with great sourcing. At Layla, we work closely with Queensland growers, fishers and farmers who share our obsession with quality. The seafood we use carries a natural sweetness and snap, the pasture-raised meats have genuine depth of flavour, and the market vegetables taste exactly as they should — vibrant, honest and full of character. Our menus evolve with the seasons because flavour does too. If a tomato isn’t singing, it doesn’t make it to the plate.

Technique — smoke, spice, balance

We build flavour in layers — toasting, charring, slow-cooking — to create depth without heaviness. Spices are treated like instruments: sometimes a solo, often a harmony. We balance richness with freshness, texture with lift, acidity with warmth. It’s refined but never fussy, adventurous but always welcoming.
